Paleo resources, part 2.

My first post on paleo resources is here.

Since the first resources post, I got another cookbook:  Make it Paleo.  It's a fantastic book, like Paleo Comfort Foods, and the index is more usable.  You don't need special paleo cookbooks to cook paleo, but it is nice to find pretested, workable recipes conveniently laid out in one book.  My birthday cake recipe was in this book.  Completely moist and delicious carrot cake.  I'm using the Bison, Bacon, Lettuce, and Tomato recipe to spice my sliders.  Smoked paprika!  So good.  It has LOTS of recipes I want to try, but simply haven't gotten to yet.  I'm hoping to find time during the holiday week.

In sad news, I am out of lard and bacon grease.  And bacon.  Bummer!  But I found out that there will be a winter farmer's market in Portland this year.  Just a few blocks up from the usual site at PSU.  We have been using five dozen eggs a week.  No kidding.  I'm really glad that my preferred egg supplier (SuDan Farms) will be at the winter market.

  3. Use bacon fat in just about anything. Fry or scramble eggs in it. Saute veggies in it. I use it as the fat in mashed cauliflower when I can. When you saute the veggies to start a soup? Bacon fat. The only thing in this world that smells better than onions sauteing in olive oil? Onions sauteing in bacon fat.
